Starr County was founded in 1848 and was created by taking area from Nueces County.

From the Census Estimates for 2019, <1> Starr had a population of 64,294 people. This is an increase of 5.46% since the last Census (which gave a population of 60,968 people in 2010).

At the time of the 2010 Census, Starr represented 0.24% of the total population of Texas.
